Tomato Concentrate: Properties of Tomatoes- Marismas de Lebrija

Properties of tomato

Tomato is ubiquitous in the cuisine of all countries across the world. It is a healthy food with multiple health-benefiting properties.

It is a low-fat, low-calorie food rich in minerals, including potassium, phosphorus and magnesium. Although tomato is mostly water (94%), it is an important source of vitamins B, C and A.

Molecular structure of Lycopene

Lycopene, an antioxidant that helps prevent diseases such as prostate, lung, stomach, bladder and cervical cancers, gives ripe tomatoes its deep red colour. It also plays an important role in the fight against cardiovascular diseases.

Other relevant properties of tomato include delaying the signs of ageing, preventing macular degeneration syndrome and cataracts and reducing LDL cholesterol levels. It also has significant anti-inflammatory properties.

The research carried out by our RDI department, in collaboration with other bodies, has highlighted the high level of lycopene in tomatoes grown in the marshlands near our company, a level higher than in other areas. This means our tomatoes are of a higher and distinctive quality.
